Creamy White Sauce Tagliatelle

Hey guys!

Today I have the recipe for this gorgeous white sauce tagliatelle which is one of my mum's recipes. I made this in the first week I moved to my new flat and it really reminded me of home and my mums cooking. For this recipe you could use any kind of pasta, I just prefer tagliatelle because the white sauce coats the pasta better.


White Sauce Tagliatella 

Total Cook Time: 30 mins
Serves: 6


For the chicken:
2 tbsp olive oil
300g chicken 
2 tsp ginger paste
4 cloves of garlic
2 tsp cumin powder
2 green chillies
1 cup frozen sweetcorn
1 tbsp mixed herbs
1/2 cup water

For the white sauce:
2 tbsp butter
3 tbsp plain flour
1 pint milk
1/2 tsp English mustard
125g mature cheddar cheese, grated

300g tagliatelle, cooked
salt + pepper, to taste


First, cook the chicken:
1. Grind up the ginger, garlic and green chillies to a rough paste.
2. Heat a pot with olive oil.
3. Add in the paste from step 1, cumin powder, sweetcorn, mixed herbs, salt and pepper to taste, chicken and water. 
4. Cook for about 15-20 mins on medium heat or until the water has evaporated. Set aside.

Next, make the white sauce:
5. In a pot on medium heat add in the butter, flour, milk, salt and pepper to taste and mustard.
6. Whisk continuously until the sauce is thick.
7. Stir in the melted cheese.

The last step is the simplest:
8. Mix together thoroughly the chicken mixture, the white sauce and the pasta in a pot.

Serve hot!
