Mushroom and Halloumi Burgers

Hope you are all doing well and enjoying this crazy hot weather we are having. Now in case you missed my Instagram announcement, I will be moving to London at the end of September and because of that, all my stuff is going to be all over the place so unfortunately, I will not be able to film any youtube videos.

The good news is that the blog posts will keep coming so you will have something to look forward to every week. 

This week I have the recipe for these delicious but very healthy mushroom and halloumi burgers. They taste so good and are light which is definitely what you want in this heat. 

The salad we use in these burgers is a special grated indian salad my mum has always made and is called kachumar. Its so refreshing and tasty that even I love it, and I am usually a salad hater.

Serve with some oven chips or salad if you're being good and enjoy!


4 tbsp butter
a handful of chopped parsley
1 tsp garlic paste
juice of 1/2 lemon

halloumi slices
portobello mushroom

1 carrot, julienned
1 tomato, chopped
1/2 cucumber, julienned
2 tsp vinegar
1 tsp sugar
1 tsp cumin powder
3 tbsp chopped coriander
salt to taste

buns/rolls ( I used olive rolls from Tesco that you can find here)
sauces (I don't really like sauce; the juice from the mushroom and the salad can be enough, but I am
             really loving this sauce)


1. To make the garlic butter,  mix together the butter, parsley, garlic and lemon juice.
2. Spoon the garlic butter into the portobello mushrooms and bake in the oven for 15-20 mins.
3.  Griddle the halloumi.
4. Make the kachumar: mix together the carrots, tomatoes, vinegar, sugar, cumin powder and chopped corinader. Add salt to taste. You can also add more or less vinegar/sugar depending on whether you prefer a sweet or sour taste.

Once the mushroom is cooked, it is time to start assembling!

1. First slice your bread roll in hald and use it to soak up any jucies from the baking tray the mushroom was on.
2. Then place your mushroom, halloumi and kachumar, top with any sauces and press down.

Serve hot!
