In this cold weather it's always nice to come home to a a hot home cooked meal. Something that's going to film you up but also create a warmth in your belly.

You shouldn't be thinking about the calories or how many pounds you're going to put on after this. Instead you should grab yourself a spoon and a bowl of this yummy ratatouille, put your feet up, curl up on the sofa with the one you love or a warm blanket (these are interchangeable) and tuck in!

What's not to love about this dish? It's filled with vegetables and its topped off with creamy cheesy potatoes, absolute bliss. Still hesitating? What if I tell you it requires minimal effort and takes less than 45 mins to cook...has that made up your mind?


1 tbsp olive oil
2 onions, chopped
2 tbsp garlic, finely chopped
1 red pepper, sliced
1 courgette, sliced
1 aubergine, sliced
1 can chopped tomatoes
3 potatoes, thinly sliced
1 tsp black pepper
1/4 tsp nutmeg powder
150 ml double cream
small bunch of basil, chopped
Cheddar, grated
salt, to taste


1. Heat the oil and to that add the onions and garlic and saute for a couple of mins till soft.
2. Stir in the chopped tomatoes and chopped basil, season and let it bubble till you have a thick sauce (roughly about 15 mins).
3. In a bowl, take your sliced potatoes and to that add the double cream, nutmeg powder and seasoning, mix and set aside.
4. Now to assemble, get a pasta dish and pour in the tomato mixture. Layer with the red peppers, aubergines and courgettes. Now layer on the creamy potatoes and pour on the excess cream. Finally finish off with a generous layer of cheese and bake in the oven at 200c for about half an hour.

Serve hot.
