Crispy Chinese Duck and Pancakes

Duck and pancakes is my favourite when I go to a chinese restaurant.

Caramelised sweet but spicy duck, soft pancakes and tangy hoisin. It is a party in your mouth.

This recipe is so quick and simple to make. You could even have the duck breasts with some steamed veg and mash if you didn't want pancakes!

2 duck breasts, trimmed of fat, skin on
1 tbsp ginger, chopped
2 tbsp honey
1 tsp chinese five spice
1 tbsp soy sauce
chinese pancakes
cucumber, julienned
spring onion, chopped
hoisin sauce

1. To marinate the duck, mix together ginger, honey, chinese five spice and soy sauce. Rub the mix into the duck and leave to marinate for at least an hour or preferably overnight.
2. Place the duck on a baking tray and bake in the oven on 150 degrees for about 30 mins. Once cooked, let it rest for at least 10 mins and then shred the meat up.
3. In the meanwhile cook your chinese pancakes. I used a bamboo steamer to do mine and they took roughly 5 mins.
4. To assemble, grab a pancake, add some duck, cucumber, spring onion and a smear of hoisin sauce. Wrap it up and enjoy!!!
