Simple gnocchi with mushrooms

Gnocchi seems like one of the least appreciated pasta out there.

It's fairly simple to make at home but for a quick weeknight dinner that can give you a tasty hot meal in 20 mins tops, store bought is allowed.

I love cooking because it helps me relax especially when I've come home from work but that doesn't mean I want to be slaving in the kitchen for hours.

You could add whatever you want to gnocchi but I think this dish is tasty just because it's so simple!

Serve it hot, shave some parmesan over the top, put some Grey's Anatomy on and put your feet up!



1kg gnocchi (they usually come in 500g packets so you need 2)
1 tbsp oil
1tbsp butter
1 onion, chopped
500g mushrooms, sliced
150g goats cheese (or any other creamy cheese)
2 cloves of garlic, chopped
a handful of parsley


1. Cook your gnocchi according to the packet and leave to one side
2. Heat the oil and the butter in a pan, add the onions, garlic, and mushrooms and saute till soft.
3. Add in the gnocchi and cook for a couple of mins.
4. Crumble in the goat's cheese and stir.

Garnish with parsley and serve hot.
