Vegetable Curry


Ingredients

1 aubergine, chopped into chunks
2 medium potatoes, chopped into chunks
2 tomatoes, chopped
1/2 cup peas
a handful coriander, chopped
1 tsp ginger paste
1 tsp garlic paste
green chillies, ground, to taste (I use 1)
2tsp cumin powder
2 tsp coriander powder
1tbsp sugar
1tsp turmeric powder
salt to taste
1tbsp vegetable oil
1/2tsp black poppy seeds
1/2tsp cumin seeds
1/4tsp asafoetida
1/4 cup water

Method

1. In a bowl mix together the aubergine, potato, chopped tomatoes, peas, chopped coriander, ginger paste, garlic paste, green chillies, cumin powder, coriander powder, sugar, turmeric powder and salt to taste.
2. Heat the oil on medium heat. To that add the poppy seeds, cumin seeds, and asafoetida and let it pop for a couple of seconds.
3. Now add in your vegetable mixture, water and mix together.
4. Cook the vegetables for about 25 mins or until they are cooked through.

Sprinkle with coriander and serve.
