Chicken Pulao

This is the fastest easiest but most tasty chicken pulao you could make.

I'm not kidding.

I just have this with some yoghurt mixed with some cumin powder and salt and it is perfect.

My dad who is more of a curry person like to have it with curry but seriously, this is good on its own.

It's nice for lunch, light but filling tasty, not greasy or oily.

I went a bit crazy with the coriander since I love coriander, but you can always add less.


3 cups basmati rice
1tbsp oil
1 tsp cumin seeds
2-3 cinnamon sticks
2-3 bay leaves
3-4 green cardamom pods
1-2 black cardamom pods
5-6 black peppercorns
1 tbsp garlic paste
1tbsp ginger paste
1 onion, sliced
500g chicken breast, cubed
1 tsp cumin powder
1 tsp coriander powder
1 tsp garam masala powder
1 cup frozen mixed vegetables
1 bunch coriander, ground
1/4 cup yoghurt
4 1/2 cups water
salt to taste
1 tbsp butter


1.Wash and soak the rice in cold water for at least 30 mins
2. In a pot, heat oil and add cumin seeds, cinnamon sticks, bay leaves, black and green cardamom pods, black peppercorns, ginger and garlic pastes and saute.
3. Now add in the sliced onion and saute till soft.
4. Mix in the chicken breast, cumin powder, coriander powder, garam masala, and mixed vegetables cover and cook for about 10-15 mins on medium heat.
5. Add the ground fresh coriander, yoghurt and stir.
6. Pour in the water, add salt and bring to a boil.
7. Add in the rice and butter and bring to a boil again.
8. Reduce the heat, cover and cook for about 25-30 mins till rice is cooked.

Serve hot!
