We are approaching the summer and our sunny weather here in the UK is becoming more reliable!

For my family, this means Barbecue!!!!!

Now we are not ones for sausages and burgers and barbeques.

We are not of the families that pop to Iceland the day before a barbeque and stock up on frozen pre-made food that can be whacked onto the grill.


We are those people who hear the word barbeque and run to the local butchers to get lots of chicken and meat.

Then comes the preparation of cleaning cutting and marinating the chicken.

This specific barbeque chicken recipe is a classic in our household and has been perfected over the years.

Try it out on a warm summers day and enjoy it hot and fresh with your family!


1 whole chicken
2tbsp coriander powder
1 tbsp chilli powder
1tsp turmeric powder
1tbsp cumin powder
1tbsp black pepper
a handful of dried fenugreek, crushed
a handful of fresh coriander, ground
1 cup yoghurt
1 lemon
3tbsp mustard oil
2 tbsp vegetable oil
ground green chillies, to taste (I use 3-4)
salt to taste


1. Clean your chicken and cut it up into pieces and score.
2. In a mixing bowl mix together the salt, coriander powder, chilli powder, turmeric powder, cumin powder, green chillies, black pepper, dried fenugreek, chicken, yoghurt, fresh coriander, lemon juice, mustard oil and vegetable oil.3. Add in the chicken and mix well making sure to rub the marinade into the scores.
4. Marinade overnight.

Cook on the barbeque and serve hot!

Top Tip: To keep the chicken succulent, brush the cooked chicken with some melted butter.
