Ama’s Blueberry Muffins
Like I've mentioned before, the women in my family are amazing cooks.
I would consider myself a pretty decent cook as well.
But the one thing I find difficult is baking. Sometimes I will have a super awesome day and be able to make scrumptious cupcakes.
And other days my cakes are raw, have eggshells in them and have a huge crater in the middle.
That's when one of my younger sisters Ammaarah comes in, she bakes the most delicious, cutest little cakes and pastries it is unreal.
Not brilliant when I'm on a diet though.
Anyway, these yummy blueberry muffins are her creation and are absolutely gorgeous. The recipe below makes 12 muffins.
As a breakfast or tea time snack, they really hit the spot!
150g self-raising flour
1 tsp baking powder
1 tsp vanilla essence
80g caster sugar
75 ml milk
1 1/2 cups blueberries
1. Preheat the over to 180 degrees Celsius
2. Mix together the flour, baking powder, vanilla essence, margarine, sugar. egg and milk.
3. Fold in the blueberries.
4. Fill the mixture in muffin cases or parchment squares (see next step)
5. For the parchment squares, cut out squares using baking parchment (10cm) and then push them into the tray and fill.
6. Bake for 15-20 mins.
Cool and serve fresh!
